Drizzle each egg with soy sauce and season with paprika. Serve the ramekins alone, or with sinangag (Fast and Simple Garlic Fried Rice—page 53) for a heartier breakfast. COOK’S NOTE: The Ilocano dialect of the Philippines uses the term “poquipoqui” in reference to their dish of eggplant, eggs and tomatoes.

Divide the risotto into individual servings and drizzle each serving with more coconut milk if desired. Serve immediately. 52 THE ADOBO ROAD COOKBOOK Fast and Simple Garlic Fried Rice Sinangag When I was a young child, the best part about spending the night at my grandparents’ house was waking up to the smell of sizzling garlic in the morning. I’d stumble out of bed and follow the aroma to the kitchen, where I’d find my Great Auntie Puyong conjuring at the stove. ” she’d ask, using the Ilocano word for garlic fried rice.
