54 THE ADOBO ROAD COOKBOOK Mung Bean Stew with Bacon and Spinach Balatong (also known as mongo guisado) is a hearty and simple Filipino stew of mung beans, tomatoes, and greens. Ironically, I crave this warm stew the most during winter months, when fresh tomatoes are out of season. But I’ve found that a can of diced tomatoes is a great remedy for bland out-of-season tomatoes. Though balatong can be made as a vegetarian dish, it is normally studded with either shrimp, pork, or both. My updated version of balatong uses bacon—a new twist that I’m sure even the staunchest of balatong fans will enjoy.

Using the back of a spoon, form a shallow well in the center of each ramekin, and then crack an egg into each well—being careful not to break the yolks. Place the ramekins onto a cookie sheet and bake in the oven until the egg whites are set, but the yolks are still runny, 15–20 minutes. Remove the ramekins from the oven. Drizzle each egg with soy sauce and season with paprika. Serve the ramekins alone, or with sinangag (Fast and Simple Garlic Fried Rice—page 53) for a heartier breakfast.
